Notion Tips
Here's a sample note page of mine in my Notion-based maths blog ∞-categories Summer Mini-course at UT. I start by picking an accent color. I particularly like yellow. For section headers, I always make part of them the accent color. If they have a number, I color the number like this

And put a line under it. This looks nice, but sometimes I also like to highlight them in grey and color some of the words

I think the highlighting looks better if you put a space before the first word, as I did above. You can put important concepts inside a grey callout. I write a lot of definitions in my maths lectures, so I always like to accent color the concept I am defining.
If you have a long paragraph and want to highlight a quote, you could use the notion quote function. But if you want more control over the quotes background and formatting, you can 1. write a space 2. click enter 3. click tab 4. write your quote 5. color the block to get a background-colored block that is indented on the top and left. The only issue is that you'll have to manually click enter to break the lines to get some right-side indentation.

You can use equation more for creative headers. For instance
woooow... :D You can also use it to get a wider array of colors. If you want to a word in really light lavender or in , , , , , , or any of the other LaTeX colors (those are just my favorites) by doing an in-line equation. You can also in LaTeX, but if you're doing this in-line, I suggest using the \small tag, otherwise the text will look bigger than the text in the rest of the line.
You can also write some headers as code tags. I especially like doing this if I'm putting them side-by-side with the content they head. Be sure to edit the color of the text on your code tag: the default is red but you can change it by highlighting it and going to the color menu as usual!
